A warm Salmon dinner

For the rice
Basmati rice ½ cup
Red split lentils ½ cup
Brocolli  200 g
Celery  2 sticks
Salt  2 tsp
Turmeric powder  1½ tsp
Bay leaves  4 pieces
For the fish
Olive oil  5 tbsp
Lightly smoked salmon fillets  2 pieces
For the sauté
Mustard seeds  1 tbsp
Spring onions  3 pieces
Red chilli 1 piece
Red Capsicum  1 piece
Green Capsicum  1 piece
Tomatoes  3 pieces
Asafoetida powder  1 tsp
Ground cumin (jeera)  3 tsp
Ginger paste 1 tbsp
For the seasoning
Ground pepper  2 tsp
Lemon ½ a piece


In a small saucepan, add the rice, lentils, turmeric and a pinch of salt. Chop the brocolli and celery sticks into small sized pieces, then put them into the saucepan. Now fill the saucepan with water and bring to a boil. Simmer for a few minutes to ensure it is soft and well cooked. Drain out excess water.
Boil some water in the kettle. Throw in the bay leaves into a mug and fill up with boiling water to half its height. After a couple of minutes, use a wire mesh strainer to filter out the water into the saucepan filled with cooked rice. Keep aside.

In a heated frying pan, pour in some olive oil and wait for a bit until you notice its decreasing viscosity (To know more, hover). Then add in the two salmon fillets and keep turning around until the sides are lightly brown. Carefully take them off the frying pan and place on a piece of aluminium kitchen foil.

Now chop the following ingredients as guided: spring onions (small sized pieces); red chilli (4 pieces); capsicum (16 pieces each); tomatoes (8 pieces each).
In the very same frying pan filled with the very same oil, add in the above mentioned items along with mustard, asafoetida, ginger paste and ground cumin. Sauté for a few minutes until the tomatoes are tender and mushy.

Serve the rice and sautéd mixture onto a plate using about fifty percent of the plate and place the fish on top. Sprinkle over some ground pepper, squeeze over some lemon juice and enjoy a delicious,warm and healthy meal.
